30 Minute Easy Instant Pot Hawaiian Pineapple Chicken and Coconut Rice
In general, I love the idea of cooking all of my food in one place with this Instant Pot Hawaiian Chicken and Coconut Rice Recipe. If I were to pick one household chore to never do again, it would be the dishes. So the fact that I can make all of my food using 2 pots, really appeals to me with this recipe! Not only is this recipe easy to clean up after, but you will also enjoy the sweetness of this Hawaiian Chicken recipe.
I could talk over and over again about how much I love my Instant pot. I use it for so much cooking, it really makes a difference in my kitchen (and again, cutting down on the amount of dishes I have to do is a plus!) I use it to make chicken, rice, vegetables faster than I can make it on my stove top.
Another benefit to my instant pot is being able to cook things from a frozen state. It makes things so much easier that I can just throw it in the pot and turn it on. It’s the newer version of the crockpot!

I came up with this recipe for my Lilo and Stitch movie night. I knew I wanted a sweet Instant Pot Hawaiian Chicken Recipe, as pineapple and coconut are very popular flavors in Hawaiian dishes.
Now for that rice recipe, coconut is such a different profile for rice. It is just so rich with flavor. Making this coconut rice with a mixture of coconut and rice is just such a great side dish for this Hawaiian Chicken recipe.
And want to know the best part? It’s made inside the same pot as your chicken! Yes its true! It is referred to in the Instant Pot world as pot in pot, or PIP for short.

Hawaiian Chicken & Coconut Rice
Equipment
- Instant Pot
Ingredients
- 2 or 3 Bone-In Chicken Breasts
- Salt and pepper
- 1 Tbsp vegetable oil
- 3 cloves garlic minced
- 2 tsp grated fresh ginger
- 1/2 cup BBQ Sauce
- 1/2 cup pineapple juice
- 1 cup or 1 – 8 oz can pineapple chunks
- 2 Tbsp cornstarch
- 2 Tbsp water
- 1/4 cup green onion sliced
For the Coconut Rice:
- 1 cups white long-grain rice any kind
- 1 cup coconut milk
- 1 cup pineapple juice
- 1 Tbsp lemon juice optional
- 1/4 tsp salt
- 2 tsp butter

- Season chicken chunks generously with salt and pepper. Hit Sauté and when the display says Hot, add the oil. Add the chicken and saute it for two to three minutes, allowing the skin to bron. Do not disturb it, leave it alone to brown in the oil. Add the garlic and ginger and continue sautéing for one minute until fragrant.
- Hit Cancel. Stir in 1/2 cup of BBQ sauce and 1/2 cup of pineapple juice. Thoroughly deglaze the pot: thoroughly scrape all the browned bits off the bottom of the pot.
For the coconut rice:
- In an instant pot safe pan, stir all ingredients together and put the container on the trivet, right on top of the chicken breasts.
- Close the lid and make sure the valve is set to Sealing. Push the Manual button. Adjust time using the + and – buttons to get to 10 minutes. When it beeps that it's done, just leave it alone for a 10 minutes natural release. Then flip the valve to vent whatever pressure is left.
- Whisk or shake together the cornstarch and water to make a mixture. Open the pot, remove the rice and set it aside. Hit the Saute button. Bring the mixture to a boil.
- Add the cornstarch slurry and boil to thicken while stirring. If you want it thicker, add a little more slurry. Then press Cancel. Add the pineapple chunks and the scallions now if you like or save them as a garnish.
- Serve the chicken over the rice and enjoy!

Hi! Quick question: I don’t have an instant pot (yet) and unfortunately it’s not quite in the budget to buy one, but I do have a crock pot. Do you think this would work in the crock pot?
I would love to try it as we love Lilo and Stitch and I think this would be fun to do someone soon!

Hmmm, the Hawaiian Chicken would probably work if you seared it first for flavor before putting it in the crockpot with everything else being the same. Maybe cook on low for 4 hours? But I know the rice wouldn’t work at the same time. I imagine the cooking times would be different if you were cooking rice in a crockpot. I’m not sure though as I’ve never made rice in a crockpot! If you do, let me know how it turns out! (And I would consider making room in the budget! My Instant pot is my go-to!)
