Hawaiian Chicken & Coconut Rice

Ingredients

  • 2 or 3 Bone-In Chicken Breasts
  • Salt and pepper
  • 1 Tbsp vegetable oil
  • 3 cloves garlic minced
  • 2 tsp grated fresh ginger
  • 1/2 cup BBQ Sauce
  • 1/2 cup pineapple juice
  • 1 cup or 1 - 8 oz can pineapple chunks
  • 2 Tbsp cornstarch
  • 2 Tbsp water
  • 1/4 cup green onion sliced

For the Coconut Rice:

  • 1 cups white long-grain rice any kind
  • 1 cup coconut milk
  • 1 cup pineapple juice
  • 1 Tbsp lemon juice optional
  • 1/4 tsp salt
  • 2 tsp butter

  • Season chicken chunks generously with salt and pepper. Hit Sauté and when the display says Hot, add the oil. Add the chicken and saute it for two to three minutes, allowing the skin to bron. Do not disturb it, leave it alone to brown in the oil. Add the garlic and ginger and continue sautéing for one minute until fragrant.
  • Hit Cancel. Stir in 1/2 cup of BBQ sauce and 1/2 cup of pineapple juice. Thoroughly deglaze the pot: thoroughly scrape all the browned bits off the bottom of the pot.

For the coconut rice:

  • In an instant pot safe pan, stir all ingredients together and put the container on the trivet, right on top of the chicken breasts.
  • Close the lid and make sure the valve is set to Sealing. Push the Manual button. Adjust time using the + and - buttons to get to 10 minutes. When it beeps that it's done, just leave it alone for a 10 minutes natural release. Then flip the valve to vent whatever pressure is left.
  • Whisk or shake together the cornstarch and water to make a mixture. Open the pot, remove the rice and set it aside. Hit the Saute button. Bring the mixture to a boil.
  • Add the cornstarch slurry and boil to thicken while stirring. If you want it thicker, add a little more slurry. Then press Cancel. Add the pineapple chunks and the scallions now if you like or save them as a garnish.
  • Serve the chicken over the rice and enjoy!
