Oh, this Disney movie has me on pins and needles! This super sweet Encanto movie night was everything I wanted it to be! A movie about acceptance and loving people just for who they are. I can’t wait to show you all the food we paired with this movie for a wonderful Colombian food adventure!

Encanto Movie Night Menu

I pulled a lot of the movie night food straight from the movie! Arepas con queso and Buñuelos are all a part of the movie!

I opted for an easy Colombian dessert that my kids would eat, and then I found Cocadas! So easy and the kids loved them!

Those coconut drinks they are drinking inside the jungle room were something I was desperately trying to achieve! I, unfortunately, could not find the coconut cups in time for our movie night so I made a drink just as pretty and delicious, Coconut Limeade!

Arepa’s were a no brainer for our dinner choice. In the movie, several times they had Arepas Con Queso so I made my own from home with some super simple tips from a friend of mine who grew up making and eating these ALL  the time!

Tip Number 1:  You HAVE to use specific cornflour. Masa Harina or cornmeal will not do. I was told that the most widely used in grocery stores is the brand P.A.N. There is white and yellow corn flour and either will do or even a mix of the two is fine as well.

 Here is a link to purchase it straight off Amazon. I was able to find P.A.N at a local GFS (Gordon Food Service). A quick search online and at my local grocery stores, told me which ones had it and which ones didn’t.

Let’s get into the details of the recipe now!

  • 1 cup of warm water
  • 1 heaped tsp of kosher salt
  • P.A.N. Corn Flour
  • 1 TBL oil (to coat the pan before frying)

Instructions

    • To a large mixing bowl, add water and salt. Stir to combine and dissolve salt.
    • A little at a time, add the P.A.N. and stir with a whisk or your hands (my preferred method). You may work your way all the way up to two cups, although we typically have 1-2 Tbsp leftover. You’re looking for a dough that doesn’t easily stick to your hands, is moldable and moist, and can be rolled into a ball. 
    • Grab a handful of  dough, and roll into a ball (as the recipe is written, this batch made 3 large arepas. 
    • Carefully press the ball between the palms of your hands to form into a roughly 1/2-inch thick disc (for thinner, crispier arepas, press closer to 1/4 inch). If it cracks a lot on the sides, your dough may need 1-2 (15-30 ml) more water. A little cracking is OK – just use your hands to close the cracks by gently patting along the edges.
    • Once the arepas are formed, heat a large cast-iron or non-stick pan over medium-high heat. Once hot, add a little oil and swirl to coat. Then add arepas, giving them a little room in between so they don’t touch. Cook for 5-8 minutes or until deep golden brown (a few blackened spots are OK). You’re looking to form a crust. Then flip and cook for 5-8 minutes more or until the underside is also browned.
    • To enjoy, slice in half and enjoy as is, spread both sides with butter. You can stuff them with white American cheese to make Arepas con queso like the movie. You can also stuff them like a sandwich like we did with ham and cheese!

Buñuelos | Encanto Movie Night Dinner

Disney knows just the right time to post things! I started looking for a recipe to make for this movie night this beauty popped up on my Instagram feed! Check out the original recipe on their post, but I have re-written them for you below!

Ingredients

Makes 16 Buñuelos.

  • 1 cup cassava flour
  • 1 cup shredded white cheddar cheese
  • 1/2 cup corn starch
  • 2 TBL Sugar
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 TBL room temperature butter
  • 1 egg
  • 2 TBL milk
  • 3 cups vegetable oil for frying
  • Optional: 3 TBL of water. May only need if dough is too dry.
  1. In a large mixing bowl, combine all ingredients up to and including the 2 TBL of milk. Mix well until all ingredients are mixed well. Dough should not be too dry or wet. If your dough is too dry, add a little bit of the water at a time until you reach a good consistency with your dough. If your dough is too wet, add in a little bit of cassva flour until consistency is right. Set aside.
  2. Heat your 3 cups of vegetable oil on the stove on medium heat until hot.
  3. Cover a pan in paper towels to prep for the draining your Buñuelos when then come out of the oil.
  4. Take your buñuelo dough and divide into 16 equal pieces. Roll the dough into balls and drop into the hot oil. Cook for 5 minutes. They will rotate on their own and cook evenly. Remove when they reach a golden brown color and let them drain excess oil onto the paper towels.
  5. Enjoy!

Cocadas | Encanto Movie Night Dessert

These cookies were a SIMPLE choice for our family. For those who don’t know, Cocadas are a simple cookie like dessert. They were so simple and my family really. Cocadas are a popular dessert in Colombia.  The original recipe I use for this is from Ingrid Hoffman from the Food Network. Check the original recipe HERE.

Ingredients

  1. Preheat oven to 400 degrees F.
  2. In a medium mixing bowl, stir together coconut, cornstarch, condensed milk, almond extract, and vanilla extract. Let mixture sit for 3 to 5 minutes.
  3. Using 2 tablespoons, drop by heaping rounded spoonfuls onto parchment lined cookie sheet about 1-inch apart. Watching closely, bake for 15 to 20 minutes until lightly golden brown. Remove from oven and cool on wire rack.
  4. Using fine meshed sieve or sifter, dust with confectioners’ sugar. Store loosely covered until ready to serve.

Coconut Limeade | Encanto Movie Night Drink

My blog is all about family friendly, so I found this Colombian drink that I knew everyone would like! 

In the one scene inside the jungle room, they are partying and drinking out of coconuts. I could not find coconut shells for drinking so this is the next best! I decorated them like those drinks though and they came out perfect!

Ingredients

  • 1 cup cream of coconut
  • 2  1/2 cups of ice
  • lime juice from 3 limes
  • 2 TBL sugar

INSTRUCTIONS

  • Place all the ingredients in a blender until smooth.
  • Serve immediately and enjoy.
